Warm Maple Pumpkin Oats
/It is officially fall here in Washington, DC! Leaves are falling, the air is getting cooler, sweaters and boots are making there way out and pumpkin recipes are EVERYWHERE! Today, I am sharing my recipe for Warm Maple Pumpkin Oats that I developed this weekend that is out of this world good!
For the past four weeks or so I have been doing the 21 Day Fix. For those of you who don’t know what it is, the 21 Day Fix is a program developed by Beach Body (same company who put out P90x and Insanity.) I have done both of those programs before and loved them, so I decided to see what this 21 Day Fix thing was all about! Needless to say, I am totally in love. It has been just what my body needed to re-start my metabolism and get me back on my game! What I love about this program most is the eating plan. There is no counting calories or calculating points involved, everything is done by portion control!
Anyway, the reason that I share any of this is because I have been trying to implement more 21 Day Fix recipes into my blog! This program has done so much for me in the past few weeks and I hope to inspire others to give it a try!
Warm Maple Pumpkin Oats
Serves 1
What You’ll Need:
1/4 cup of old fashioned oats
3/4 cup of unsweetened almond milk
1/4 cup 100% pure pumpkin
1 tablespoon pure maple syrup
1/4 teaspoon pure vanilla extract
1/4 teaspoon pumpkin pie spice
Directions:
1.) Place all of the ingredients into a small pot on medium heat. Leave uncovered and stir occasionally for 3-4 minutes until the oatmeal has a thick consistency.
2.)Remove from heat and serve warm!
Optional toppings:
+ apples
+ pecans
+ walnuts
