Ever since I can remember, I have been eating energy bars. In fact, I still recall trying my first Luna Bar back when I was eight years old after swim practice! Through the years, it’s been reassuring to watch the energy bar market make some big strides. Slowly, the focus has shifted from a long list of unpronounceable ingredients to a short list of familiar items. Because let’s face it, most of us want to know what we’re putting into our bodies. Unfortunately, the “cleaner” the bar, the higher the price point. That’s why Iike making my own energy bars, especially these Three Ingredient Energy Bars.
What I love about these homemade energy bars is how satiating they are. High in healthy fats, wholesome fiber, natural sugar and filling protein, they are the perfect snack to eat at home or take on-the-go. In addition, they are super easy to make and store great in the fridge or freezer. Happy munching!
Three Ingredient Energy Bars
Makes 7 Bars
Time: 30 Minutes
1 Cup whole dates, pitted
1/2 Cup all-natural peanut butter at room temperature
1/4 Cup egg whites
* Vegans can sub egg whites for unsweetened applesauce and increase bake time to 30 minutes.
1. Preheat oven to 325 degrees F. Line a loaf pan with parchment paper, lightly greasing the paper with coconut oil and set aside.
2. Place the dates into a food processor with three tablespoons of water. Chop the dates in the food processor until they are a creamy consistency.
3.) In the food processor, add the peanut butter and egg whites to the dates and mix well.
4.) Transfer the mix to the loaf pan and spread evenly across the bottom of the pan, using a spatula to even the surface.
4. Bake for 20 minutes, until the sides of the bars are slightly browned. Remove from heat and set aside to cool.
5.) Once cooled, slice the bars lengthwise into 7 individual bars and enjoy. For best storage, keep in the refrigerator or freezer.
