Oh So Good, String Bean Salad


String bean salad is one of my favorite go-to vegetable dishes. Not only does it make a great side dish, but it’s also a great way to jazz up the every day salad. When you are shopping for ingredients make sure to buy French string beans otherwise known as haricots verts, rather than American string beans. Haricots verts are longer and thinner and in my opinion, taste much better than regular string beans! Enjoy! 

Serves 4

What You’ll Need:
+ one 16 oz. bag of French string beans, both ends trimmed
+ one tablespoon of dijon mustard
+ one teaspoons of extra virgin olive oil
+ one tablespoons of fresh dill, packed
+ salt and pepper to taste

+ First, cut the stems off either end of each string bean and place aside. 
+ Place water in a medium size pot and bring to a boil. Once the water is boiling, add the string beans into the water for exactly one minute. After a minute,     immediately remove the string beans from the boiling water and drain. 
+ Prepare a bowl of ice water by adding cold water and a few ice cubes to a medium size bowl. Add in the string beans and allow them to sit until           completely cool.
+ In a small bowl, mix together the dijon mustard and olive oil with a fork.
+ Remove the string beans from the ice water and drain. Once they are drained use paper towels to dry them, removing any excess water. 
+ Place the string beans in a bowl and add the dijon olive oil mix on top. Add the fresh dill, salt and pepper and mix well.
