Doughnuts remind me of being a kid on a saturday morning. In my family, doughnuts were a special treat that only happened a few times a year, but when they did it was like Christmas. Since growing up, I can’t remember the last time I ate a doughnut. A 400 calorie breakfast treat, fried and covered in icing is just too rebellious for me - I stick to oatmeal. However, after spotting a doughnut pan in Bed Bath & Beyond the other day I decided to splurge. I quickly became determined to create a healthy version of my favorite doughnut, chocolate glazed. And to my surprise, they turned out pretty damn flawless!
Healthy Chocolate Glazed Doughnuts
Makes 6 Doughnuts
Total Time: 30 Minutes
1/2 Cup unbleached all-purpose flour
1/2 Cup almond flour
1/4 Cup cocoa powder
1/2 Cup granulated sugar
1/2 Teaspoon baking powder
2 Tablespoons of extra virgin coconut oil
1 Teaspoon pure vanilla extract
1/2 Cup unsweetened milk
1/3 Cup unsweetened applesauce
1.) Preheat the oven to 300 degrees F. Lightly grease a 6-cavity doughnut pan with coconut oil and set aside.
2.) Place the flour, almond flour, cocoa powder, sugar and baking powder into a medium size bowl and mix well. Add the rest of the ingredients and stir until creamy.
3.) Using a tablespoon, spoon the batter into the doughnut pan, filling each cavity to the brim.
4.) Bake for 22 to 24 minutes until the doughnuts are firm. Allow the doughnuts to cool before removing them from the pan.
For added decadence, create icing by mixing 1/2 cup confectioners’ sugar, 1 tablespoon of almond milk and 1/4 teaspoon vanilla extract. Drizzle the icing on top and enjoy!
