Okay, so first off...HAPPY FRIDAY. Second off, I hope you are staying dry. The weather here is a bit nuts.. something about a hurricane?!? Anyway, if you are anything like me, today's weather wants to make you A. snuggle on the couch all day and B. drink copious amounts of tea. Unfortunately, this is not a reality for most of us, who actually need to do things with our lives (sigh.) The good news is that I have a recipe that will absolutely blow your mind! (see picture above)
These Breast Cancer Brownie Bites were created to honor the beginning of Breast Cancer Awareness month which runs all October long! In celebration of this cause I will be posting articles about ways to prevent breast cancer, sharing important facts, as well as doing some sweet giveaways :)
These tasty brownie bites are not only full of ooey-goeey chocolate (eat em' warm), they are also bursting with rich chocolatey flavor and guess what, they are only 66 calories. UM I KNOW! So, if this news didn't make your day, I am not quite sure what will!
Not only are these brownies 66 calories, they are also #vegan and contain only 1 tablespoon of oil and under a cup of sugar for the entire batch! Feeling fancy? Add super rich, chocolate ganache for a total of 90 calories per brownie bite!
Makes 16 Mini Brownie Bites
What You'll Need:
+ 1 tablespoon of coconut oil, melted
+ 1/2 cup of unsweetened apple sauce
+ 3/4 cup sugar
+ 1 teaspoon of vanilla
+ 1/3 cup cacao or cocoa powder (I personally prefer cacao powder, it really enhances the flavor!)
+ 1/2 cup whole wheat flour (gluten-free flour should work too)
+ 1/4 teaspoon baking powder
+ 1/4 teaspoon salt
+ 1 tablespoon unsweetened almond milk, hot
+ 3 tablespoons chocolate chips
+ 1 tablespoon butter (I used Earth Balance butter)
+ 1/2 cup powdered sugar
+ Preheat oven to 350 degrees F.
+ Line a mini cupcake tray with cupcake liners. (You can also make these regular cupcake size - see cook time below.)
+ Place all of the brownie ingredients into a medium size bowl and mix well, until blended.
+ Fill each cupcake liner to the top, using a small spoon.
+ Bake for 14-17 minutes or until a toothpick comes out clean.
NOTE: If you are making these regular size bake for 22-25 minutes.
+ In a small ceramic bowl, microwave the almond milk for 45 seconds or until very hot.Remove from the microwave and add in chocolate chips. Allow the chocolate chips to sit for 2 minutes to melt. Once melted, stir with a spoon. If the chocolate chips do not fully melt, place back in the microwave, but be extremely careful not to overheat and burn the chocolate.
+ Melt the butter in a the microwave for 20-25 seconds and add to the bowl of chocolate. Mix well and allow to sit for a few minutes.
+ Once the chocolate and butter is mixed, stir in the 1/2 cup of powered sugar and mix. Refrigerate for 20-30 minutes or until the frosting becomes a bit firm.
+ Spread and enjoy!
