Homemade Dark Chocolate Oatmeal Kashi Cookies


Growing up, my favorite after school snack was cookies. But not just any type of cookies, Kashi Oatmeal Cookies. I loved these things so much that I could have probably eaten the entire box. Recently, I picked up a box of Kashi Cookies in the grocery store and was shocked by the amount of ingredients they have in them: 

Whole Grain Oats, Semisweet Chocolate Chips (Organic Cane Syrup, Chocolate Liquor, Cocoa Butter, Soy Lecithin, Ground Vanilla Beans), Rolled Whole Grain Blend (Hard Red Wheat, Oats, Rye, Triticale, Barley), Expeller Pressed Canola Oil, Kashi Seven Whole Grain Flour (Whole: Oats, Hard Red Wheat, Rye, Brown Rice, Triticale, Barley, Buckwheat), Honey, Dried Cane Syrup, Brown Rice Syrup, Chicory Root Fiber, Oat Fiber, Vegetable Glycerin, Sodium Bicarbonate, Natural Flavors, Soy Lecithin, Evaporated Salt, Mixed Tocopherols For Freshness, Monocalcium Phosphate, Nonfat Milk, Almonds, Eggs, Walnuts, Peanut Flour.

For a cookie that markets itself as being "healthy," it certainly contains a lot of weird ingredients I've never heard of like: Triticale, Vegetable Glycerin, Tocopherols and Monocalcium Phosphate to name a few...

So, that night when I got home I decided to develop a clean version of these delicious cookies and by George, I think I got it! If you love Kashi Cookies, you've got to try this recipe out!  

Makes 16-17 Cookies

+ 1/2 cup whole wheat flour
+ 1 1/2 cup old fashioned oats
+ 1/4 cup of brown sugar
+ 1/4 teaspoon baking soda
+ 1/4 cup of agave or honey
+ 2 tablespoons of coconut oil (melted at room temperature)
+ 1 flax egg (1 tablespoon ground flax & 3 tablespoons water) 
+ 1 tablespoon water
+ 1/2 teaspoon pure vanilla extract
+ 3 tablespoons of dark chocolate chips 

+ Preheat oven to 350 degrees F.
+ Lightly grease a cookie sheet with coconut oil.  Prepare the flax egg by adding 1 tablespoon of flax seed and 3 tablespoons of water into a small bowl. Allow the the flax egg to bind for a few minutes. 
+ In a medium bowl, mix together the coconut oil, brown sugar, agave/honey and water.
+ In a separate bowl, mix together the dry ingredients then stir in the oats. Add the dry ingredients to the wet and mix well. 
+ Form the dough into small balls on the cookie sheet and bake 12 to 14 minutes.
