Baked Chunky Monkey Oatmeal

This recipe can be made vegan and gluten-free with substitutes

Baked Banana Oatmeal


Makes 6 servings
Time: 50 minutes

2 cups old fashioned oats (or GF oats)
2 ripe bananas, mashed
1/4 cup honey or pure maple syrup
1 teaspoon baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon sea salt
1 cup unsweetened almond milk
1 large egg (or 1 flax-egg) 
2 tablespoons ghee or coconut oil, melted
2 teaspoons pure vanilla extract
1/4 cup walnuts, chopped
1/4 cup semisweet chocolate chips

1. Preheat oven to 375 degrees F. 

2. Grease a square, 8x8 pan with cooking spray or coconut oil and set aside.

3. Place all of the ingredients into a large bowl and mix well to combine. 

4. Transfer the batter into the greased 8x8 inch pan and bake for 40 minutes or until lightly browned. Allow to cool before serving.
