Earlier this week, a friend offered me a pumpkin muffin that he had made from a store bought muffin mix. After a hectic morning, I had skipped breakfast and of course, took the muffin without hesitation. After gobbling it up, I was curious about the calorie content per muffin and decided to look it up. I was astounded to see that the itty bitty muffin I had just inhaled was a whopping 250 calories! Out of sheer determination, I decided to make it my mission to develop a skinny pumpkin muffin recipe.
With a little bit of experimentation and a lot of luck, I was able to shave off over 100 calories per muffin and replicate the exact same taste as the muffin I had enjoyed earlier in the week. Mission accomplished! Give this delicious skinny pumpkin muffin recipe a try and be sure to let me know what you think!
