Simple Puréed Sweet Potatoes
Time: 35 minutes

1 1/2 pounds sweet potato
1/2 cup orange juice (bottled or fresh)
1/8 teaspoon cayenne pepper
1/4 teaspoon salt
1/4 cup half and half (I love Califia Farms' Better Half for dairy-free)
1 tablespoon ghee or butter at room temp (or Earth Balance butter)
1. Peel the sweet potatoes and chop into large cubes. Place the cubes into a large pot filled with an inch of water or so. Cover with a lid and steam on medium-low heat for 15-20 minutes until the sweet potatoes are tender. Make sure to check the pot throughout to ensure that the water has not evaporated.
2. Drain the potatoes in a colander and transfer to a high-speed blender or electric mixer. Add the rest of the ingredients and process until creamy. Serve warm.
