Mediterranean Glow Bowls

 
 

If there’s one thing I’ve learned from 2017, it’s definitely the magic behind a well-stocked fridge. There’s simply nothing like opening your fridge and realizing ha! I have ingredients to make something with, or the opposite feeling; when you realize your fridge is empty and it will be eggs or pasta for dinner. Sound familiar? I feel you. That’s why I’m currently obsessing over this Mediterranean Glow Bowl.

Complete with quinoa, cucumber, kalamata olives, hummus, feta cheese, mixed greens, freshly squeezed lemon and drizzled tahini, this bowl makes me want to do a happy dance. Better yet, many ingredients in this bowl (i.e. quinoa, kalamata olives, hummus, feta cheese and tahini) can last for a few weeks or months in your fridge. Therefore, as long as you have fresh produce you can make this bowl whenever you please! 

 
 

Mediterranean Glow Bowl

Time: 15 minutes 

Ingredients
quinoa
mixed greens
chopped cucumber
pitted kalamata olives
feta cheese
hummus
lemon juice
tahini

Directions
1. Cook the quinoa following the directions on the package. As the quinoa cooks, chop the cucumber and begin to assemble your bowl.

2. Line the bottom of the bowl with mixed greens and top with chopped cucumber, olives, feta cheese, hummus and quinoa.

3. Once the bowl is assembled, squeeze lemon juice and drizzle tahini over the bowl. Serve immediately.

[a tip or two just for you] 

* Olive oil can easily be subbed out for tahini. 

** If you are meal prepping these bowls or planning to pack for work, make sure to place tahini or oil on the side to avoid the salad from getting soggy.

*** To make this dish vegan, sub avocado for feta cheese.
