Fall Pumpkin Oats

Okay, so fall is finally here, but fall weather… not so much.

Despite my plea to mother nature to bring fall weather, she has sadly denied my request.

While it may 80 degrees outside, it certainly hasn’t stopped me from baking up all the fall favorites.

I’m talking:
Pumpkin Spice Protein Bars
Harvest Granana 
Skinny Pumpkin Muffins

Inspired by these fall flavors I decided to create an oatmeal recipe that combines all of my favorite fall things (think: pumpkin, apple, maple syrup, cinnamon and pumpkin spice) poured into one delicious warm bowl of morning oats.

In addition, these oats have a host of other healthy ingredients like old fashioned oats (make this recipe gluten-free by buying GF oats), almond butter and chia seeds.

Fall Pumpkin Oats


Serves 1
Time: 10 minutes

3/4 cup filtered water
1/2 cup finely chopped apple
1/4 cup old fashioned oats
1 tablespoon almond butter
1 tablespoon chia seeds
1/4 cup pure pumpkin (unsweetened) 
1/2 teaspoon pumpkin pie spice
2 tablespoons maple syrup

Note: If you are looking to reduce the sugar content of this recipe feel free to only use 1 tablespoon of maple syrup

1. Place the water and apples in a small pot and bring to a boil. After 2-3 minutes lower the heat and add in the oats, almond butter, chia seeds, pure pumpkin, pumpkin pie spice and maple syrup. 

2. Cook on low heat for another 2-3 minutes until the oatmeal has a thick, creamy consistency. Top with apple slices, drizzled nut butter, pepita seeds, etc. and enjoy!
