Ever since I can remember I have adored lemon poppy seed muffins. As pumpkin muffins are to fall, lemon poppy seed muffins are to summer. To put it simply, they are the quintessential breakfast staple of summer.

In celebration of summer solstice, I thought I would share one of my favorite recipes, Lemon Chia Seed Muffins. At 160 calories per muffin, these cheerful treats are perfect for those with a calorie conscious sweet tooth. Packed with PH balancing lemon and superfood chia seeds, these muffins are sure to become the star of your summer.

Healthy Lemon Chia Seed Muffins 

Makes 10 Muffins
Time: 40 minutes

What You’ll Need
1 1/3 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 tablespoons chia seeds
1/2 cup honey
1/4 cup lemon juice + 2 teaspoons lemon zest
1/4 teaspoon salt
2 eggs or flax eggs (see here
2 tablespoons of coconut oil
1/2 cup almond milk or milk of choice

Directions
1.) Preheat oven to 350 degrees F. Lightly grease a muffin tin with coconut oil and set aside. 

2.) Place the flour, baking powder, baking soda, chia seeds and salt into a large bowl and mix well.

3.) In a separate bowl pour the honey, lemon juice, eggs, coconut oil and almond milk into a bowl. Once mixed, add the wet ingredients to the dry ingredients and stir well. 

4.) Pour the batter into the muffin tin until each tin is about 3/4 of the way full. 

5.) Bake for 20-23 minutes or until a tooth pick comes out clean. Allow to cool before enjoying!
