Blueberries have always had a special place in my heart. As a kid I remember crawling through fragrant blueberry bushes and picking out the largest, juiciest berries that I could find. There was something so special about hunting and gathering our berries to take home to enjoy all week long.
Though my blueberry picking days are long over, I still thoroughly enjoy perusing through local farmers markets in search of the perfect pint. And last weekend, I hit the jackpot. I was in dire need of refuel after a full day of adventuring through the city when I spotted a farmer selling the most stunning blueberries - firm but juicy, sweet but not too tart. Pure perfection.
Since this week was a bit of a whirlwind, I have been taking breakfast out the door with me. In attempts to start preparing more healthful and timely recipes, I was inspired to create this simple Golden Flax & Blueberry Parfait. Filled with antioxidant rich blueberries, fiber-filled flaxseeds and protein rich yogurt, this breakfast is the perfect way to start any summer morning.
Golden Flax & Blueberry Parfait
1.) Place a heaping spoonful of yogurt on the bottom of a small mason jar or tupperware container. Sprinkle some ground flaxseed on top of the yogurt and add a small handful of blueberries.
2.) Repeat these steps until you have a layered breakfast parfait. Drizzle honey for added decadence.
