This week has been quite the whirlwind! With September here, I have officially started grad school and could not be more psyched to be back in the classroom! With full-fledged work days and classes at night, I have been endlessly searching for wholesome snacks to eat before I head to my three hour evening classes. Because I have the privilege to eat at home before leaving for school, I decided to whip up a quick, tasty snack that could hold me over until dinner… Chocolate Chip Pumpkin Oats.
While some of us may not be in full-blown fall mode, September 1st officially marks the start of pumpkin season… at least in my mind it does. So, for all of my premature pumpkin people, this recipe is completely and totally dedicated to you.
Similar to my Chunky Monkey Morning Oats, these Chocolate Chip Pumpkin Oats are just as simple to make with only 6 ingredients. In addition, they are loaded with energy boosting carbohydrates, satiating fiber, plant-based protein and heavenly bites of dark chocolate. With their wholesome blend of nutrients, Chocolate Chip Pumpkin Oats make the perfect breakfast, snack or even after-school treat. I know you’ll go crazy over this one!
Chocolate Chip Pumpkin Oats
Time: 5 Minutes
1/4 cups oats
1/4 cup 100% pure pumpkin (not pumpkin pie filling)
1 cup of filtered water
1 1/2 tablespoons of honey or other sweetener
1/4 teaspoon pumpkin pie spice
1/2 tablespoon chia seeds
1/2 tablespoon chocolate chips
1. Place the oats, pumpkin, water, honey, pumpkin pie spice and chia seeds into a small pot. Mix the ingredients together with a wooden spoon and bring to a boil on medium heat.
2. Once the oatmeal is boiling, reduce to low heat and allow the oatmeal to simmer, stirring frequently until it thickens.
3. Once ready, remove from heat and allow to cool slightly before pouring the oatmeal into a bowl. Top the oatmeal with chocolate chips and enjoy!
