Growing up, we would pack our car every Friday afternoon in the summer and head to Cape Cod for the weekend. After what seemed like endless hours, we would arrive and jump out of the car, only to be hit by a wave of ocean air. I loved that feeling. To this day, when I get a big whiff of salty air, my mind still races back to those summers on the Cape. 

One of my favorite things about the Cape is the culture Bostonian's have ingrained in it's roots. From it's small ma and pop ice cream shops to killer old school seafood dinners to weathered shingles and beer battered everything, the Cape is intrinsically itself. 

The Silver Lounge, one of my favorite restaurants on the Cape preserves this authenticity to a T. Around since 1938, this local restaurant (complete with an Uncle Bill's Country Store) has been dishing out the classic Cape dishes including: overflowing lobster rolls, rich seafood casserole and of course, baked fish with buttery "crumbs."

Today I am sharing my Dad's recipe for Baked Cape Cod Haddock. Inspired by the dishes at the Silver Lounge, my Dad has been making this classic recipe ever since I can remember. This is one of my favorite fish recipes of all time and immediately transports me back to summers at the Cape. What I love about this recipe is how simple it is. It bakes in 20 minutes and requires little to no prep work. Better yet, when it's finished it tastes like a dish that might have taken you hours.

Cape Cod Baked Haddock 

Serves 3
Prep Time: 5 Minutes
Bake Time: 20 Minutes

Ingredients:
     1 pound wild caught haddock (I found mine at Trader Joe's) 
     12-15 butter crackers (Late July Crackers are a great healthy alternative to Ritz Crackers) 
     2 tablespoons butter (Earth Balance for non-dairy eaters) 
     Salt & pepper to taste

Directions:
1.) Preheat oven to 400 degrees F. 

2.) In a microwave safe bowl, microwave the butter for 30-40 seconds or until melted. Crumble the crackers in their sleeve or in a bowl and add to the melted butter and mix. 

3.) Lay the fish on a sheet pan and sprinkle with salt and pepper. Evenly sprinkle the crumbled crackers on the fish and place into the oven. 

4.) Bake for 20 minutes and enjoy.
