After wrapping up a crazy week last week (finals and traveling galore) I am thrilled to be back to normalcy. There’s something that’s comforting about routine and as much as I love taking time off, it always feels good to jump back into the swing of things. With this week’s temperatures soaring into the nineties, I’ve started to curate a list of summer dishes I want to develop this season. Although DC’s summers can be hotter than hot, one of my favorite things to do is develop recipes around the changing of the seasons. There’s something exciting about exploring new, fresh flavors, ingredients and recipes; it feels like a celebration of life.
This recipe for blackberry almond oats encompasses all the things I love about summer in each and every bite. The oats are light, fruity, colorful, healthy and most importantly, downright delicious. Best of all, they’re extremely easy to make. With only a few ingredients and a couple minutes of your time, I know you’re going to love these oats as much as I do!
Blackberry Almond Oats
Makes 1 serving
Time: 5 Minutes
1/4 cup oats
1/2 cup sliced banana (1/2 banana)
1/2 cup blackberries
2 teaspoons sweetener (honey, sugar, agave, etc.)
1/4 teaspoon almond extract
3/4 cup water
2 tablespoons sliced almonds
1. Place all of the ingredients except for the sliced almonds into a small pot and cook on medium heat, stirring with a wooden spoon as needed.
2. As the oatmeal begins to boil, reduce to simmer and stir until the oatmeal is a thick, creamy texture. Remove from heat and top with sliced almonds and blackberries.
