Ever since my Chunky Monkey Morning Oats went viral on Pinterest, I have been trying to come up with more easy and innovative oatmeal recipes. Currently, I am obsessed with these Banana Peach Chia Oats.
Peaches are one of my favorite fruits to consume in the summer and I love finding ways to put them in recipes! Like many people, I have had trouble with peaches in the past due to their high pesticide levels. However, I have noticed that if I buy organic peaches (pesticide free) then I can happily consume peaches without a problem.
In fact, peaches are known as one of the most pesticide-ridden fruits in the U.S. A recent study took a bunch of peaches from different places and found that together, the peaches contained a combination of 53 different pesticides. Moral of the story? When you can, buy your peaches organic!
Now that that's said and done, let's talk about this recipe! These Banana Peach Chia Oats are chock full of good ingredients and tons of flavor. I especially love the added unsweetened coconut flakes to give the oats a little island twist. In addition, these oats are great hot or can be made in advance and refrigerated overnight to make overnight oats. Enjoy!
Banana Peach Chia Oats
Time: 5 Minutes
1 Cup of water
1/4 cup old fashioned oats (gluten-free works too!)
1/2 medium organic peach, chopped
1/2 medium banana, sliced
1 tablespoon chia seeds
1 tablespoon unsweetened coconut flakes
1.) Place the water, oats, banana slices, chopped peaches, chia seeds and coconut flakes in a small pot and bring to a boil. Once the mixture begins to boil, bring to low heat and stir.
2.) Once the oatmeal has a thick, creamy consistency, remove from heat and transfer to a small bowl. Top with addition peaches or banana if desired and enjoy!
