It's hard for me to get creative with breakfast, especially because the only real thing on my mind first thing in the morning is coffee. However, upon my From the Farmer delivery yesterday morning, I found myself feeling inspired by the luscious colors of yet another watermelon radish. With an avocado sitting on my counter ripened to perfection, I decided to give a basic breakfast favorite a little Springtime twist.
There's something about the month of March that leaves me feeling a bit stir crazy. With Winter settling down, my anticipation of Spring has reached full throttle. Avocado Toast With Sliced Radish
Time: 5 Minutes
What You'll Need:
+ 2 pieces of whole wheat toast
+ 1/3 of a ripe avocado (or more!!)
+ 1 small watermelon radish, washed, peeled & thinly sliced
+ 1 tablespoon reduced-fat feta cheese
+ salt and pepper to taste
+ Spread the avocado on two pieces of toast. Add the watermelon radish on top of the toast, as well as the tablespoon of feta cheese. Sprinkle with salt and pepper and serve immediately.
