It's hard for me to get creative with breakfast, especially because the only real thing on my mind first thing in the morning is coffee. However, upon my From the Farmer delivery yesterday morning, I found myself feeling inspired by the luscious colors of yet another watermelon radish. With an avocado sitting on my counter ripened to perfection, I decided to give a basic breakfast favorite a little Springtime twist.
There's something about the month of March that leaves me feeling a bit stir crazy. With Winter settling down, my anticipation of Spring has reached full throttle. In fact, I have even added three different plants to my bedroom, just this week.. I. Need. Spring. Anyway, I hope you all have a great Friday and let me know if you decide to give this recipe a try!
