Skinny Pumpkin Doughnuts

Doughnuts, doughnuts, DOUGHNUTS! But seriously, who doesn't love a good doughnut? I have been slaving a way getting this recipe right and have finally got it perfected! These doughnuts make the perfect breakfast for an autumn morning and are a fraction of the calories of a typical doughnut.

If that didn't give you enough of a reason to make these, you may stop and realize, but wait I don't have a doughnut pan! Well, you can pick one up on Amazon or you can choose to make them into doughnut holes which can be made with either a mini muffin try or a regular baking sheet! 

NOW you have no excuse NOT to make these perfect pumpkin treats!

Makes 6 doughnuts and 28 doughnut holes

What You'll Need:
+ 1 cup of whole wheat flour (or gluten-free flour) 
+ 1/2 cup of sugar
+ 3 packets Truvia (or add another 1/4 cup of sugar) 
+ 1 tablespoon pumpkin pie spice
+ 1 teaspoon baking powder
+ 1/2 teaspoon fine sea salt
+ 2 tablespoons coconut oil or other oil of choice
+ 1/4 scalded almond milk, aka heated milk (check out this link for help
+ 1/2 cup 100% pure pumpkin

Directions:
+ Preheat the oven to 350 degrees F. Lightly spray a 6 cavity doughnut pan, mini muffin tin or baking sheet with oil (depending on the pan you choose they will have slightly different cooking times) 
+ Place the flour, sugar, Truvia, pumpkin pie spice, baking powder and salt into a medium size bowl and mix. 
+ Scald the almond milk (watch this quick video for help)
+ Once milk is scalded add the oil, milk and pumpkin to the dry mixture and stir until dough forms.
+ At this point your process will change, if you are using a doughnut pan, simply fill each cavity with the dough (makes about 6 doughnuts.) If you are making doughnut holes, you will need to roll the dough into golf ball sized balls and place on either a baking sheet or in a mini muffin tin. You may need to wet your hands while doing this as dough will get sticky! (makes about 22 doughnut holes!)
+ The large doughnuts should cook for about 12-13 minutes, while the doughnut holes need about 11-12 minutes. To ensure that your doughnuts are fully cooked, insert a toothpick and see that it comes out clean before removing from the oven.
