This recipe takes a meat-free spin on classic Mexican-style beef tacos! Packed with a whopping 33 grams of plant-based protein, you just can’t go wrong with a staple recipe like this!
Instead of meat, I used a product called seitan (say-tahn.) Seitan is made out of wheat and is a great non-soy meat alternative! What I love about seitan is how easy it is to cook. Because it typically comes seasoned, all you have to do is heat up and you're ready to go!
For this recipe, I used Upton’s Naturals Italian Seitan found at Whole Foods. I love Upton’s products and the variety of flavors that they offer! For the tortillas, I used Ula Fresh Stone Ground Yellow Corn Tortillas. These tortillas only contain three ingredients: organic yellow corn, sea salt and lime and taste absolutely delicious!
What You’ll Need:
+ 4 small tortillas (I love Ula Tortilla’s from Whole Foods!)
+ 1 package of flavored Seitan ( I used Upton’s Naturals)
+ 1/2 a ripe avocado, sliced
+ 2 green onions, chopped
+ a handful of grape tomatoes, chopped
+ Spray a skillet lightly with olive oil. Add one 8 oz. package of crumbled seitan and the chopped green onions and cook on medium heat for 2-3 minutes.
+ In a separate skillet, warm the corn tortillas for a minute or so on low heat.
+ Once the seitan is hot, add the chopped grape tomatoes and remove from heat.
+ Place the seitan and veggies on top of the soft corn tortillas and add avocado as desired.
