Happy (almost) Halloween! I don’t know what it is, but Halloween has always been one of my favorite holidays. From watching Halloween movies like Hocus Pocus and Halloweentown (obvs), to getting dressed up with friends for a night of fun, what in this world could be better?!? Okay, maybe you can think of a few things, but seriously, Halloween is so s*ht. Unfortunately, every up has it's down and a night of drinking and candy, can actually take a pretty major toll on our bodies. Sugar and alcohol both have toxic effects on our bodies and are infamous for causing bloating, headaches and hangovers (ew.)
The real trick of Halloween (and perhaps every holiday) is finding the balance. You can still have fun and make conscious choices at the same time and it can be easy, but you have to be smart. In fact, while I am not a huge fan of calorie counting, I always like to allow myself x amount of additional calories on holidays for alcohol, special dishes and of course, dessert.
In attempt to keep my calorie count at bay this Halloween, I decided to create these 90 Calorie Monster Brownies! Baking something moderately healthy is a great way to keep yourself from diving into that candy bowl and staying on track! In addition, I have included all of the nutritional information below to help you stay accountable!
So, in honor of my most favorite holiday ever, I give you these 90 Calorie Monster Brownies! Each brownie with frosting contains 90 calories and in my humble opinion, beats any candy bar! Not only are these brownies low calorie, they are also dairy, egg and nut-free, so this definitely makes an easy treat to bring into schools! In addition, I suppose you could also make them gluten-free by substituting gluten-free flour for whole wheat flour, though I have not tried it myself! Makes 28 Brownies
What You'll Need:
+ 1 cup whole wheat flour
+ 1 1/2 cups sugar
+ 1/2 teaspoon baking powder
+ 1/2 teaspoon fine sea salt
+ 1 tablespoon of coconut oil, melted
+ 1 cup of unsweetened apple sauce
+ 1 teaspoon of vanilla
+ 2/3 cup cacao or cocoa powder (I personally prefer cacao powder, it really enhances the flavor)
+ 1 tablespoon unsweetened almond milk, hot
+ 3 tablespoons chocolate chips (I used Guittard dark chocolate baking chips)
+ 1 tablespoon butter (I used Earth Balance butter)
+ 1/2 cup powdered sugar
+ Preheat oven to 350 degrees F.
+ Lightly spray a 9x13 baking dish with oil (or if you wish to halve the recipe, bake in a 9x9 square pan)
+ Place all of the brownie ingredients into a medium size bowl and mix well, until blended.
+ Bake for 20 minutes or until a toothpick comes out clean.
+ In a small ceramic bowl, microwave the almond milk for 45 seconds or until very hot.Remove from the microwave and add in chocolate chips. Allow the chocolate chips to sit for 2 minutes to melt. Once melted, stir with a spoon. If the chocolate chips do not fully melt, place back in the microwave, but be extremely careful not to overheat and burn the chocolate.
+ Melt the butter in a the microwave for 20-25 seconds and add to the bowl of chocolate. Mix well and allow to sit for a few minutes.
+ Once the chocolate and butter is mixed, stir in the 1/2 cup of powered sugar and mix. Refrigerate for 20-30 minutes or until the frosting becomes a bit firm.
+ Spread and enjoy!
