Yum, yum, YUM! What a simple, yet easy lunch idea! This recipe is great for lunch on-the-go or if you are just looking for a light bite. I recently fell in love with edamame hummus. It's so rich and creamy that it almost tastes like cream cheese. While I am not a huge fan of eating it plain (like I do with hummus,) it works great for cooking and as a spread on sandwiches! In this recipe, we also use peppers and onions. What gives the sandwich that nice light taste is that the veggies are water sautéed instead of cooked in oil. What You'll Need:
+ Whole wheat tortilla (opt for tortillas with only a few ingredients) 
+ Edamame hummus (find this at most grocery stores)
+ Bell peppers of your choice
+ Red onion
+ Avocado
+ Romaine
+ Salt & pepper

Directions:
+ Spread edamame hummus on an open faced tortilla. Next, water sautée the peppers and onions until tender.
+ Remove the veggies from the skillet and drain in a colander. Place the veggies in the tortilla along with the sliced avocado and romaine.
+ Sprinkle with salt and pepper and roll the tortilla to serve.
