Lovely Little Lunches: The Sconset

Let's chat about packing lunch. Most of us are packing lunch for two reasons: to save money and/or to eat healthier. Packing lunch can be a burden but if you know how to pack a delicious one then it becomes something you can look forward to! Not to mention you will save yourself a whole lot of money! As most of you know, I usually like to eat a salad for lunch, but sometimes it's fun to change things up! Today I am going to be sharing a recipe for my favorite sandwich on the planet: The Sconset.

Serves 2

Ingredients: 
+ Fresh multi-grain bread, sliced
+ 1/2 avocado, mashed
+ 1/2 tomato, thinly sliced
+ original hummus (store bought or homemade)
+ sliced carrots
+ 1 cucumber, peeled and sliced
+ 1 package of sprouts
optional: regular or vegan cheese slices 

Directions:
+ Start by spreading the hummus on one side of the bread and top with sprouts.
+ Next, peel and cut the cucumber length wise so that you end up with a long strip of peeled cucumber and place it on the sandwich.
+ Finally, add the thinly sliced tomatoes, carrots and avocado mash. Top with a piece of bread and enjoy!
