Yum! If you like tuna sandwiches then you have to try this recipe out! This version of “tuna” salad is fish-free, mayo-free and 100% vegan! Pair the tuna salad with bread to make a sandwich or place it on top of a salad. Regardless, this recipe is something that anyone can enjoy! Ingredients: + 1 can great white northern beans, drained and rinsed + 1/4 cup celery, chopped + 1/4 cup red onion, diced + 1/4 cup hummus + 1 tablespoon mustard of choice + 1/4 teaspoon garlic powder + 1 tablespoon fresh squeezed lemon juice + dash of paprika + salt and pepper to taste
Directions: + Place the rinsed and drained great white northern beans into a medium size bowl and mash up until all of the beans are flattened (I started mashing with a fork, but quickly switched to my hands.) + Once the beans form into a paste, place the celery, red onion, hummus, mustard, garlic powder and lemon juice into the bowl and mix well. + Once everything is combined, add a dash of paprika and salt and pepper to taste.
