Say goodbye to the high cal jarred stuff and hello to easy, homemade Skinny Vodka Sauce! This recipe swaps heavy cream for unsweetened almond milk and eliminates the added heaps of Parmesan cheese and oil that comes with the traditional stuff. The best part? Your family and friends won't even be able to tell a difference, that's how good it is! For total brownie points enjoy this sauce with whole wheat pasta or gluten-free pasta. Buon Appetito!
+ 1 tablespoon extra virgin olive oil
+ 1 medium white onion, chopped
+ 3 cloves of garlic, minced
+ 1/2 teaspoon crushed red pepper flakes
+ 1 1/2 teaspoons dried oregano
+ 1 cup cheap vodka (not flavored!)
+ 2 (28-ounce) cans peeled plum tomatoes, drained
+ 1/4 cup fresh oregano
+ 3/4 to 1 cup unsweetened plain almond milk
+ 1 teaspoon salt
+ 1/4 teaspoon pepper
+ Heat up 1 tablespoon of olive oil in a large sauté pan over medium heat. After a minute or so, add the onions and garlic and cook until onions are translucent. Add in the red pepper flakes, dried oregano and cook for another minute. Finally, add in the vodka and simmer uncovered for 5-7 minutes.
+ Drain the 2 cans of peeled plum tomatoes and place them into a food processor or high speed blender for a few seconds.
+ Add the blended tomatoes, fresh oregano, almond milk, salt and pepper to the sauce and allow to simmer for 10 minutes. Enjoy!
