Okay, so I don't mean to brag or anything, but these sugar cookies might be the most delicious cookies that I have ever tasted. The cookies are 100% vegan, oil-free and refined sugar-free, can you say yes!!?! Obviously, just because they are healthy (ish) you shouldn't eat the entire batch, but it is important to treat yourself! In fact, allowing yourself to eat sweets in moderation actually helps you to make healthy eating decisions in the long run. So grab yourself a big glass of almond milk and enjoy a cookie or two!
+ 1 cup almond flour (find this at Whole Foods or in the organic section of your grocery store)
+ 1/4 cup whole wheat flour
+ 1/2 teaspoon baking soda
+ 1/4 teaspoon salt
+ 1/4 cup honey
+ 3 tablespoons unsweetened apple sauce
+ 1/2 teaspoons pure vanilla extract
+ 1/4 cup confectioners sugar
+ 1 tablespoon unsweetened almond milk
+ Preheat the oven to 350 degrees F.
+ Place the almond flour, wheat flour, baking soda, baking powder and salt into a large bowl and mix well. Once mixed, add in the maple syrup, apple sauce and the vanilla extract and mix well.
+ Once the dough is formed, roll into balls and place on a cookie sheet greased with coconut oil. + Bake cookies for 12-14 minutes or until bottoms are golden brown.
+ Create the glaze by mixing the confectioners sugar and the tablespoon of almond milk in a small bowl. Drizzle the glaze over the baked cookies and use sprinkles to garnish! Enjoy!
