Healthy Vegan Pancakes


Every Saturday my Dad used to make us pancakes using his grandmother's recipe. Any time I would have friends over for sleepovers he would make his famous pancakes for them and boy, were they always a hit! However, after I went vegan I had to stop eating them because they contained butter, eggs and milk. Sooo.... I decided to take on the challenge and I have successfully adapted my great grandmother's pancake recipe! These babies are now vegan and a bit healthier than before! Woohoo! Check out the recipe below!

+ 1 cup whole wheat flour
+ 1 cup of unsweetened almond milk
+ 1/3 cup applesauce + 1 tablespoon of sugar, maple syrup or other sweetener
+ 1 1/2 teaspoon baking powder
+ 1 tablespoon coconut oil
+ 1/4 teaspoon sea salt

+ Place all of the ingredients into a bowl and mix together well.
+ Grease a large sauté pan by adding a little bit of coconut oil and allow it to get very hot before placing the pancake batter on it.
+ Once the pancake is poured onto the pan, add any desired extra ingredients like chocolate chips, bananas, blueberries and so forth. Cook on medium until the top of the pancake bubbles and is browned on one side.
+ Flip the pancake and cook on the other side until slightly browned.
+ Remove the pancake from the pan with a spatula. Repeat the process and serve!
